Description

Easy Cake Mix Coffee Cake is a soft, buttery cinnamon coffee cake made with yellow cake mix, sour cream, and a sweet brown sugar streusel for an easy breakfast cake or brunch dessert everyone loves.


Ingredients

1 box yellow cake mix

3 large eggs

1 cup sour cream

1/2 cup water

1/2 cup vegetable oil

1 cup brown sugar

2 teaspoons ground cinnamon

1 cup all-purpose flour

1/2 cup unsalted butter, melted

1 cup powdered sugar

2 to 3 tablespoons milk


Instructions

1. Preheat the oven to 350°F and grease a 9×13-inch baking pan.

2. In a large mixing bowl, combine the yellow cake mix, eggs, sour cream, water, and vegetable oil. Stir until smooth.

3. In a separate bowl, mix the brown sugar, ground cinnamon, all-purpose flour, and melted butter until crumbly.

4. Spread half of the cake batter into the prepared pan.

5. Sprinkle half of the streusel mixture evenly over the batter.

6. Add the remaining batter and gently spread it across the pan.

7. Top with the rest of the streusel mixture.

8. Bake for 32 to 38 minutes, until the center is set and a toothpick comes out with a few moist crumbs.

9. Let the cake cool for at least 20 minutes.

10. Whisk the powdered sugar with 2 to 3 tablespoons milk until smooth, then drizzle over the cake before slicing and serving.

Notes

Sour cream gives this coffee cake its soft texture, so full-fat sour cream works best for the richest result.

For extra crunch, you can add chopped pecans or walnuts to the streusel topping.

Let the cake cool slightly before glazing so the drizzle stays visible instead of melting completely into the top.
