Ingredients

1 lb ground breakfast sausage (pork or turkey)

6 large eggs

2 cups whole milk

1½ cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

2 cups cubed day-old bread (French or sourdough)

½ cup chopped red bell pepper

½ cup chopped green onions

1 tsp garlic powder

½ tsp salt

½ tsp black pepper

Optional: chopped fresh parsley for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Cook sausage in a skillet over medium heat until browned; drain excess fat.
  3. Layer cubed bread in the baking dish. Top with sausage, bell pepper, and green onions.
  4. In a bowl, whisk eggs, milk, garlic powder, salt, and pepper. Stir in both cheeses, reserving some cheddar for topping.
  5. Pour egg mixture evenly over the layers in the dish. Let sit for 10–15 minutes.
  6. Sprinkle remaining cheddar on top. Bake uncovered for 45–50 minutes until golden and center is set.
  7. Let rest for 5–10 minutes before slicing. Garnish with parsley and serve warm.
