Ingredients
0.75 cup pancake mix
0.5 cup milk
1 large egg
2 tablespoons maple syrup
0.5 teaspoon vanilla extract
0.5 cup fillings of choice (blueberries, chocolate chips, diced sausage, etc.)
Instructions
1. Preheat oven to 350°F and lightly grease a mini muffin tin.
2. In a bowl, mix pancake mix, milk, egg, maple syrup, and vanilla extract until just combined.
3. Gently fold in your favorite filling(s).
4. Divide the batter into the mini muffin cups, filling each about ¾ full.
5. Bake for 12–15 minutes until golden and a toothpick comes out clean.
6. Cool slightly before serving.
