Ingredients
1 tablespoon olive oil
4 bell peppers
1 pound ground beef
1 cup cooked rice
1 small onion, diced
2 cloves garlic, minced
1 cup tomato sauce
1 teaspoon Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
1 cup shredded mozzarella cheese
Instructions
1. Preheat the oven to 375°F (190°C). Slice the tops off the bell peppers and remove seeds and membranes. Brush the outsides with olive oil and place in a baking dish. Pre-bake for 15 minutes to soften slightly.
2. In a skillet over medium heat, cook diced onion in olive oil until translucent. Add ground beef and cook until browned, breaking it up as it cooks.
3. Stir in garlic, cooked rice, tomato sauce, Italian seasoning, salt, and pepper. Simmer mixture for 5 minutes to allow flavors to meld.
4. Remove peppers from the oven and spoon the filling into each one, packing it down lightly.
5. Sprinkle shredded mozzarella cheese evenly over the tops of the stuffed peppers.
6. Return to oven and bake for 20 minutes, until cheese is melted and bubbly.
7. Remove from oven and let rest for a few minutes before serving. Garnish with fresh parsley if desired.
