Ingredients
For the Meat Filling:
1 lb ground beef (or turkey)
1 small onion, diced
1 bell pepper, diced
2 cloves garlic, minced
1 packet taco seasoning
1 cup salsa (mild or spicy based on preference)
1 can (15 oz) black beans, drained and rinsed
1 can (10 oz) diced tomatoes with green chilies
Salt and pepper to taste
For Assembly:
6 large flour tortillas
2 cups shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1 cup sour cream
Fresh cilantro, for garnish
Sliced jalapeños, for garnish
Instructions
- Prepare the Meat Filling: In a large skillet over medium heat, cook the ground beef until browned. Drain excess grease. Add diced onion, bell pepper, and minced garlic, cooking for 3-4 minutes until softened. Stir in taco seasoning, salsa, black beans, and diced tomatoes. Cook for another 5 minutes, seasoning with salt and pepper to taste.
- Assemble the Casserole: Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish. Spread a thin layer of the meat mixture on the bottom. Lay a tortilla on top, followed by a layer of meat filling and cheese. Repeat layers, finishing with a tortilla layer on top.
- Add Cheese and Bake: Spread sour cream over the top layer and sprinkle the remaining cheese. Cover with foil and bake for 25 minutes.
- Broil and Garnish: Remove the foil and broil for 3-5 minutes until the cheese is golden and bubbly. Cool slightly before garnishing with cilantro and jalapeños.
