Description
This easy 2-ingredient cottage cheese flatbread recipe is a gluten-free, low-carb, high-protein alternative to traditional bread. Perfect for wraps, dipping, or as a base for toppings, it’s made with just eggs and cottage cheese for a healthy, quick meal.
Ingredients
1 cup cottage cheese
2 large eggs
Instructions
1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a blender or food processor, combine 1 cup of cottage cheese and 2 large eggs. Blend until smooth.
3. Pour the batter onto the baking sheet and use a spatula to spread it into thin circles or ovals (about 1/8-inch thick).
4. Bake for 20 to 25 minutes or until golden at the edges and set in the center.
5. Let cool slightly before removing from the parchment. Serve warm or store.
Notes
Blending the cottage cheese ensures a smooth, pourable batter and even cooking.
Store leftover flatbread in an airtight container in the fridge for up to 4 days.
Reheat in a skillet or oven to revive texture.
