Description

Easy 15-Minute Kale Caesar Salad is a fresh, creamy, and flavorful salad recipe made with tender kale, Caesar dressing, Parmesan cheese, lemon juice, and crunchy croutons. This quick kale Caesar salad is perfect for an easy lunch, a simple dinner side, or a healthy Caesar salad idea when you want something fast and satisfying.


Ingredients

6 cups chopped kale

1/3 cup Caesar dressing

1/3 cup grated Parmesan cheese

1 cup croutons

1 tablespoon lemon juice

1 teaspoon olive oil

1/4 teaspoon black pepper

1 teaspoon anchovy paste


Instructions

1. Wash the kale, dry it well, remove the stems, and chop the leaves into bite sized pieces.

2. Place the kale in a large bowl with the lemon juice and olive oil. Massage the leaves for 1 to 2 minutes until slightly softened.

3. Add the Caesar dressing, anchovy paste, black pepper, and Parmesan cheese. Toss well until the kale is evenly coated.

4. Add the croutons just before serving and toss lightly.

5. Top with extra Parmesan if desired, then serve immediately.

Notes

Use curly kale or lacinato kale, but be sure to remove the thick stems for the best texture.

Massaging the kale helps soften the leaves and makes the salad much more enjoyable to eat.

Add the croutons at the very end so they stay crunchy and do not absorb too much dressing.
