Ingredients
2 pounds chicken thighs or breasts
1 can pineapple chunks with juice (20 oz)
1/2 cup soy sauce
1/3 cup brown sugar
2 cloves garlic, minced
1 tablespoon cornstarch
2 tablespoons water
1 red bell pepper, chopped (optional)
Instructions
1. Trim and cut the chicken into bite-sized chunks, then place in the crockpot.
2. In a bowl, combine pineapple chunks (with juice), soy sauce, brown sugar, and minced garlic. Mix until sugar dissolves.
3. Pour the sauce mixture over the chicken in the crockpot.
4. Cook on low for 5–6 hours or high for 3–4 hours until chicken is tender.
5. Mix cornstarch with cold water. Add to crockpot 30 minutes before serving. Stir well and leave uncovered to thicken.
6. Once thickened, serve over rice or with your favorite sides. Garnish with green onions or sesame seeds if desired.
Notes
This dish can be made with fresh pineapple; just add a little extra brown sugar for balance.
Add chopped red bell pepper in the last hour of cooking for a pop of color and texture.
For spicier flavor, stir in a bit of chili garlic sauce or red pepper flakes.
