Description

Delicious Spinach and Feta Stuffed Salmon is a flavorful baked salmon recipe made with tender salmon fillets, creamy spinach, tangy feta cheese, garlic, and herbs. This easy stuffed salmon dinner is perfect for weeknights or special occasions and pairs beautifully with rice, potatoes, or roasted vegetables.


Ingredients

4 salmon fillets

2 cups fresh spinach

1/2 cup feta cheese, crumbled

3 tablespoons cream cheese, softened

2 garlic cloves, minced

1 tablespoon olive oil

1 tablespoon lemon juice

1/2 teaspoon dried oregano

1/2 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon fresh parsley, chopped


Instructions

1. Preheat the oven to 400°F and lightly grease a baking dish or line it with parchment paper. Pat the salmon fillets dry and cut a pocket into the side of each fillet without slicing all the way through.

2. Heat the olive oil in a skillet over medium heat. Add the garlic and cook for 30 seconds, then add the spinach and cook until wilted. Remove from the heat and let it cool slightly.

3. Stir the feta cheese, cream cheese, lemon juice, and dried oregano into the spinach mixture until the filling is creamy and well combined.

4. Spoon the filling into each salmon pocket and place the stuffed fillets in the prepared baking dish.

5. Season the tops of the salmon with paprika, salt, and black pepper.

6. Bake for 15 to 20 minutes, or until the salmon is opaque and flakes easily with a fork.

7. Sprinkle with fresh parsley and serve warm.

Notes

Use thick center cut salmon fillets so the pockets are easier to slice and fill.

Do not overbake the salmon or it can dry out. Start checking around the 15 minute mark.

Let the filling cool slightly before stuffing so it stays creamy and easy to handle.
