This delicious sausage and egg breakfast casserole is a savory, cheesy, and hearty make-ahead breakfast perfect for holidays, brunch, or meal prep. With simple ingredients like eggs, sausage, and cheese, this breakfast bake feeds a crowd and reheats beautifully. Ideal for easy mornings or cozy weekend gatherings.

Ingredients

10 oz breakfast sausage

8 large eggs

2 cups milk

1 ½ cups shredded cheddar cheese

4 cups bread cubes

½ tsp salt

¼ tsp black pepper

Optional sautéd vegetables (like onions, peppers, or spinach)

Instructions

1. In a skillet over medium heat, cook the sausage until browned and crumbled. Drain excess grease and set aside.

2. Lightly grease a 9×13-inch baking dish. Spread bread cubes evenly across the bottom.

3. Layer cooked sausage over bread, followed by shredded cheese and optional pre-cooked vegetables.

4. In a large bowl, whisk together eggs, milk, salt, and pepper. Pour this mixture evenly over the casserole.

5. Either bake immediately at 350°F for 40-45 minutes, or cover and refrigerate overnight. If baking cold, add 10 extra minutes.

6. Let it rest for 5 minutes before slicing. Serve warm.

Notes

Use day-old or slightly dried bread for best texture.

Customize with your favorite veggies or cheese blends.
