This Delicious Reuben Crescent Bake recipe combines savory corned beef, Swiss cheese, sauerkraut, and Thousand Island dressing, all wrapped in flaky crescent dough. It’s an easy Reuben sandwich casserole perfect for a family dinner, potluck, or game-day crowd.
Ingredients
1 sheet crescent dough (bottom layer)
1/2 lb corned beef, sliced or chopped
6 slices Swiss cheese
1 cup sauerkraut, drained
1/2 cup Thousand Island dressing
1 sheet crescent dough (top layer)
1 egg, beaten (optional, for brushing)
Instructions
1. Preheat oven to 375°F and grease a 9×13-inch baking dish or line with parchment paper.
2. Roll out the first crescent dough sheet and press it into the bottom of the dish.
3. Spread Thousand Island dressing evenly over the dough.
4. Layer with Swiss cheese, corned beef, sauerkraut, and another layer of Swiss cheese if desired.
5. Cover with the second crescent dough sheet and pinch the edges to seal.
6. Brush the top with the beaten egg for a golden finish.
7. Bake for 20–25 minutes until the top is golden brown and flaky.
8. Cool for 5 minutes, then slice and serve warm.
Notes
This bake is best served fresh but also reheats well in the oven or air fryer.
Use seamless crescent dough sheets if possible for easier assembly.
