Description

This Ground Turkey Sweet Potato Bowl is a wholesome, protein-packed dinner that combines lean ground turkey with roasted sweet potatoes, fresh spinach, and creamy avocado. Perfect for meal prep or a healthy weeknight meal, this bowl is gluten-free, dairy-free, and full of flavor.


Ingredients

1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 teaspoon paprika

1/2 teaspoon cumin

1/2 teaspoon salt

1/4 teaspoon black pepper

2 cups fresh spinach

1 avocado, sliced

1 tablespoon lime juice


Instructions

1. Preheat oven to 400°F and line a baking sheet with parchment paper.

2. Toss diced sweet potatoes with olive oil, salt, and pepper. Roast for 25-30 minutes or until golden and tender.

3. In a skillet over medium heat, sauté the diced onion in olive oil until soft.

4. Add garlic and cook for 30 seconds until fragrant.

5. Stir in the ground turkey, breaking it apart and cooking until browned.

6. Season the turkey with paprika, cumin, salt, and black pepper. Mix well.

7. Add spinach to the skillet and stir until wilted.

8. Assemble bowls by layering roasted sweet potatoes, turkey-spinach mix, sliced avocado, and a squeeze of lime juice.

Notes

Use pre-diced sweet potatoes to save time on prep.
