Ingredients
2 chicken breasts
1 tablespoon chili powder
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 1/2 cups heavy cream
3 garlic cloves, minced
1/2 cup grated parmesan cheese
1/3 cup crumbled smoked feta cheese
8 ounces fettuccine pasta
1 bunch fresh asparagus
2 tablespoons butter
Instructions
1. Rub chicken breasts with chili powder, salt, and pepper.
2. Heat olive oil in a skillet and sear chicken until golden and cooked through.
3. Let the chicken rest, then slice.
4. Toss asparagus with melted butter and parmesan cheese.
5. Roast asparagus at 400°F for 12-15 minutes until crisp and golden.
6. Cook fettuccine pasta until al dente, then drain and reserve some water.
7. In a pan, melt butter and sauté garlic until fragrant.
8. Add heavy cream, bring to a simmer, and stir in parmesan and smoked feta until melted.
9. Toss pasta in the sauce, adding pasta water to loosen if needed.
10. Plate the pasta, top with sliced chicken, and serve with roasted asparagus.
