Instructions

1. Preheat your oven to 350°F and line a 9×13-inch baking dish with parchment paper or grease it well.

2. Peel and finely grate the carrots, then set aside.

3. In a large bowl, whisk together eggs, brown sugar, granulated sugar, vanilla extract, and vegetable oil until smooth.

4. Add the flour, baking powder, salt, and cinnamon. Stir until just combined—do not overmix.

5. Fold in the grated carrots until evenly distributed throughout the batter.
