This decadent Brazilian carrot cake recipe features a moist carrot-infused sponge and creamy chocolate frosting with a unique carrot twist. Perfect for parties or indulgent cravings, it’s an irresistible Brazilian dessert favorite.
Ingredients
3 medium carrots, peeled and chopped
1 cup vegetable oil
3 large eggs
1 cup granulated sugar
2 cups all-purpose flour
1 tablespoon baking powder
1 pinch salt
3 tablespoons butter
3 tablespoons cocoa powder
1 can sweetened condensed milk
1/4 cup heavy cream
1 tablespoon carrot puree (optional for frosting)
Instructions
1. Add carrots, vegetable oil, eggs, and sugar to a blender. Blend until completely smooth.
2. In a large bowl, whisk together flour, baking powder, and salt.
3. Pour carrot mixture into dry ingredients and fold gently until just combined.
4. Pour batter into a greased 9×13 inch pan and bake at 350°F for 35–40 minutes.
5. In a saucepan, melt butter. Stir in cocoa powder, sweetened condensed milk, and heavy cream.
6. Simmer until thickened, then optionally stir in carrot puree. Let frosting cool slightly.
7. Spread frosting over cooled cake and let set 30 minutes before serving.
Notes
This cake is even better the next day after flavors deepen.
You can skip the carrot puree in the frosting for a more traditional version.
If using a glass baking dish, reduce oven temperature to 325°F.
