Description

Ingredients

1 pound boneless skinless chicken breasts

2 cans white beans, drained and rinsed

1 small onion, chopped

3 cloves garlic, minced

1 can diced green chiles

3 cups chicken broth

8 ounces cream cheese, softened

1 teaspoon ground cumin

1 teaspoon dried oregano

1 teaspoon chili powder

1 teaspoon salt

1/2 teaspoon black pepper

1 cup frozen corn

2 tablespoons lime juice

2 tablespoons fresh cilantro, chopped


Instructions

1. Place the chicken breasts in the crockpot and add the white beans, onion, garlic, diced green chiles, chicken broth, cumin, oregano, chili powder, salt, and black pepper.

2. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the chicken is tender and cooked through.

3. Remove the chicken from the crockpot and shred it with two forks. Return the shredded chicken to the slow cooker.

4. Add the cream cheese and frozen corn, then stir until the cream cheese melts into the chili and the mixture becomes creamy.

5. Cover and cook for 15 to 20 minutes more if needed, then stir in the lime juice and fresh cilantro before serving.

Notes

For an even creamier chili, mash a small portion of the beans before adding them to the crockpot.

If you like more heat, add diced jalapeño or a pinch of cayenne near the end of cooking.

This chili thickens as it sits, so add a splash of broth when reheating leftovers if needed.
