Ingredients
1 pound ground beef
1 can (10 oz) Rotel (diced tomatoes and green chilies)
16 oz Velveeta cheese
1 tablespoon taco seasoning
Optional: 1 jalapeño, chopped or 1 teaspoon hot sauce
Instructions
1. Brown the ground beef in a skillet over medium heat, breaking it apart until fully cooked. Drain excess grease.
2. Add the cooked beef to your crockpot. Cube the Velveeta and add it to the slow cooker.
3. Pour in the entire can of Rotel, including juices. Add taco seasoning.
4. Cover and cook on low heat for 2 to 3 hours, stirring occasionally until the cheese is fully melted and the dip is smooth.
5. Stir in jalapeños or hot sauce, if using. Serve warm directly from the crockpot.
Notes
This dip thickens as it cools; add a splash of milk when reheating.
You can substitute Velveeta with American cheese or cheddar for variation.
