Description

Ingredients

2.5 lbs Yukon Gold potatoes

1.5 cups Gruyere cheese, shredded

1 cup Parmesan cheese, grated

2 cups heavy cream

2 cloves garlic, minced

2 tablespoons butter

1 teaspoon salt

0.5 teaspoon black pepper

1 teaspoon fresh thyme (optional)


Instructions

1. Preheat your oven to 375°F (190°C). Thinly slice the Yukon Gold potatoes using a mandoline or sharp knife. Mince garlic and shred cheeses.

2. In a saucepan, combine heavy cream, garlic, salt, pepper, and thyme. Heat gently over low heat until fragrant, then remove from heat.

3. Grease a baking dish with butter. Layer potato slices, slightly overlapping. Sprinkle Gruyere and Parmesan. Repeat layers, ending with cheese on top.

4. Pour cream mixture over potatoes. Cover with foil and bake for 40 minutes.

5. Remove foil and bake for another 25–30 minutes until the top is golden and crispy.

6. Let it rest for 10 minutes before serving to allow layers to set.
