Ingredients

1 pound ground beef

1 1/2 pounds Yukon Gold potatoes

1 medium onion

3 cloves garlic

1 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons olive oil

1 tablespoon butter

2 tablespoons fresh parsley


Instructions

1. Peel the potatoes and cut them into small even cubes. Place them in cold water for 10 minutes, then drain and pat them very dry.

2. Heat a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it up as it cooks. Remove the beef from the skillet and set aside.

3. Drain excess grease if needed, leaving a little in the pan for flavor. Add the olive oil and butter.

4. Add the chopped onion and cook for 3 to 4 minutes until softened. Stir in the minced garlic and cook for 30 seconds.

5. Add the potatoes to the skillet and season with salt, black pepper, and paprika. Cook for 15 to 20 minutes, stirring occasionally, until the potatoes are golden, crisp on the outside, and tender inside.

6. Return the cooked ground beef to the skillet and stir everything together. Cook for another 3 to 5 minutes until hot and well combined.

7. Sprinkle with chopped fresh parsley and serve immediately.

Notes

Use Yukon Gold potatoes for the best balance of creamy centers and crisp edges.

Make sure the potatoes are thoroughly dried before they go into the skillet so they brown properly.

For extra flavor, top each serving with shredded cheese, a fried egg, or a spoonful of sour cream.
