Ingredients
1.5 pounds baby potatoes
4 tablespoons unsalted butter
3 cloves garlic, minced
3 tablespoons olive oil
0.5 teaspoon salt
0.25 teaspoon black pepper
0.75 cup grated parmesan cheese
1 tablespoon chopped fresh parsley
Instructions
1. Place baby potatoes in a large pot, cover with water, and add salt. Bring to a boil and cook for 15 to 20 minutes until fork-tender.
2. Drain potatoes and lay them on a parchment-lined baking sheet. Use a glass or masher to gently flatten each one.
3. In a small saucepan or bowl, melt butter and stir in minced garlic. Let sit for 2–3 minutes.
