Ingredients
1 lb beef strips
1 egg white
3 tbsp cornstarch
2 tbsp soy sauce
1 cup vegetable oil
2 cloves garlic, minced
1 tsp grated ginger
1 tsp chilli flakes
2 tbsp sugar
1 tbsp rice vinegar
2 tbsp ketchup
1 tbsp dark soy sauce
3 cups cooked rice
2 green onions, chopped
Instructions
1. Toss the beef strips with soy sauce, egg white, and cornstarch. Let marinate for 10–15 minutes.
2. Heat vegetable oil in a skillet and fry beef in batches until crispy and golden. Drain on paper towels.
3. Remove excess oil from pan, keeping about 1 tablespoon. Sauté garlic, ginger, and chilli flakes until fragrant.
4. Add sugar, rice vinegar, ketchup, and dark soy sauce. Let the sauce bubble and thicken slightly.
5. Add the crispy beef to the pan and toss to coat evenly with sauce.
6. Serve hot over cooked rice and garnish with chopped green onions.
Notes
Use flank or skirt steak for the best texture and flavor.
Make sure your oil is hot enough for proper crisping without absorbing too much.
Letting the beef sit with cornstarch helps create a crisp, light coating.
