Ingredients
1.5 pounds boneless skinless chicken thighs
1 cup buttermilk
1 cup all-purpose flour
1/2 cup cornstarch
1 teaspoon paprika
1 teaspoon garlic powder
2 teaspoons cajun seasoning
12 ounces rotini or fusilli pasta
1.5 cups fresh corn kernels or frozen
2 tablespoons olive oil
1.5 cups heavy cream
1/2 cup grated parmesan cheese
2 tablespoons cream cheese
2 tablespoons butter
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Cut the chicken thighs into bite-sized chunks and marinate them in buttermilk, salt, pepper, and garlic powder. Let sit for 20 minutes.
2. In a bowl, combine flour, cornstarch, paprika, and garlic powder. Dredge the marinated chicken.
3. Heat oil and fry the chicken in batches until golden and crispy. Drain on paper towels.
4. Toss corn kernels with olive oil and salt, then roast in a hot skillet or oven until charred. Set aside.
5. Boil pasta until al dente, reserving 1/2 cup pasta water. Drain the rest.
6. In a large pan, melt butter and olive oil, add cajun seasoning and garlic powder, then pour in heavy cream.
7. Add cream cheese and parmesan. Stir and simmer until the sauce is smooth.
8. Add cooked pasta and reserved water to loosen the sauce. Stir well.
9. Serve the pasta topped with crispy chicken bites and roasted corn. Garnish with extra parmesan or herbs.
Notes
Crispy chicken stays best if kept separate until just before serving.
To reheat, use stovetop for pasta and oven or air fryer for chicken.
