Ingredients
1 lb salmon, skinless and cut into bite-sized cubes
1/2 cup cornstarch
1 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
2 eggs, beaten
1 cup panko breadcrumbs
1/2 cup mayonnaise
1/4 cup sweet chili sauce
1 tbsp sriracha
1 tbsp lime juice
Oil for frying
Instructions
1. Cut salmon into bite-sized cubes and pat dry with paper towels.
2. In a bowl, mix cornstarch, garlic powder, salt, and pepper.
3. In a second bowl, beat the eggs. In a third bowl, add panko breadcrumbs.
4. Dredge each salmon piece in the cornstarch mixture, then dip in egg, then coat in panko.
5. Heat oil in a skillet over medium heat. Fry salmon bites in batches until golden, about 3-4 minutes per side.
6. Transfer to a wire rack or paper towel to drain.
7. In a small bowl, mix mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth.
8. Serve salmon bites with bang bang sauce drizzled on top or on the side for dipping.
Notes
Pat salmon completely dry before breading to avoid soggy coating.
Use an oil thermometer to maintain frying temperature around 350°F.
Air fry at 400°F for 10 minutes if you prefer a lighter option.
