Ingredients

1 medium head cauliflower florets

2 tablespoons olive oil

1 cup panko breadcrumbs

1/2 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 cup mayonnaise

1/4 cup plain Greek yogurt

2 cloves fresh garlic, minced

1 tablespoon lemon juice

1/4 teaspoon salt


Instructions

1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper. Cut cauliflower into medium florets and pat dry.

2. In a bowl, whisk flour, garlic powder, paprika, salt, pepper, and water into a smooth batter. In another bowl, add panko breadcrumbs.

3. Dip each floret into the batter, shake off excess, and coat in panko. Place on the baking sheet spaced apart.

4. Drizzle or spray florets with olive oil. Bake for 25-30 minutes, flipping halfway, until crispy and golden.

5. Mix mayonnaise, Greek yogurt, garlic, lemon juice, and salt in a small bowl for the sauce. Chill until serving.

6. Serve cauliflower bites warm with garlic sauce on the side.
