Description
These crispy air fryer zucchini fritters are a healthy and flavorful snack or appetizer. With grated zucchini, parmesan, and panko, they’re easy to make and perfectly crunchy without deep-frying. Ideal for clean eating, vegetarian meals, or light lunches.
Ingredients
2 medium zucchinis
1 large egg
1/3 cup all-purpose flour
1/4 cup grated parmesan cheese
1/3 cup panko breadcrumbs
2 green onions, chopped
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Olive oil spray
Instructions
1. Grate the zucchini and squeeze out excess moisture using a towel or cheesecloth.
2. In a bowl, mix zucchini, egg, flour, parmesan, panko, green onions, garlic powder, salt, and pepper.
3. Shape the mixture into small patties.
4. Preheat the air fryer to 375°F. Spray the basket with olive oil.
5. Place patties in the basket, spray the tops, and air fry for 10 minutes.
6. Flip and air fry for another 5–8 minutes until crispy and golden.
7. Let cool slightly and serve with your favorite dip or toppings.
Notes
Make sure to squeeze out as much liquid from the zucchini as possible.
You can substitute parmesan with shredded cheddar for a twist.
Add chili flakes to the mixture if you prefer a spicy kick.
