This creamy white chicken chili with cream cheese is the ultimate comfort food. This easy white chicken chili is hearty, flavorful, and made with simple pantry ingredients.


Ingredients

2 chicken breasts

2 cans white beans

1 block cream cheese (8 oz)

1 can green chilies (4 oz)

3 cups chicken broth

1 medium onion, chopped

3 cloves garlic, minced

1 teaspoon cumin

1 teaspoon oregano

1 teaspoon salt

0.5 teaspoon black pepper


Instructions

1. Sauté chopped onions in a large pot over medium heat until translucent, about 3-5 minutes. Add garlic and cook for another minute.

2. Add chicken breasts, white beans, green chilies, chicken broth, cumin, oregano, salt, and pepper. Bring to a simmer.

3. Cover and simmer for 20-25 minutes or until the chicken is cooked through.

4. Remove chicken, shred with two forks, then return it to the pot.

5. Add cubed cream cheese and stir until fully melted and incorporated.

6. Let simmer for another 5-10 minutes, stirring occasionally.

7. Serve hot with your favorite toppings like shredded cheese, avocado, or cilantro.

Notes

Use rotisserie chicken for a faster version.

Add extra green chilies for more heat.
