Description

Creamy Velveeta Chicken Rotini with Mozzarella Garlic Sauce is a comforting cheesy pasta dish featuring tender chicken, rotini pasta, Velveeta, mozzarella, and a rich garlic butter sauce. Perfect for weeknight dinners, potlucks, and family gatherings.


Ingredients

12 ounces rotini pasta

2 cups cooked chicken breast cubed

8 ounces Velveeta cheese cubed

1 cup shredded mozzarella cheese

3 garlic cloves minced

2 tablespoons butter

1 cup milk

Salt and pepper to taste

1 tablespoon chopped parsley optional


Instructions

1. Bring a large pot of salted water to a boil. Cook the rotini pasta according to package instructions until al dente. Drain and set aside.

2. In a large skillet over medium heat, melt butter and sauté minced garlic until fragrant, about 1 minute. Be careful not to burn the garlic.

3. Lower the heat and pour in the milk, stirring gently. Add the Velveeta cubes and stir until completely melted and smooth. Season with salt and pepper to taste.

4. Add the cooked chicken to the skillet, followed by the drained rotini. Toss everything together to coat evenly in the sauce.

5. Sprinkle the shredded mozzarella on top and let it melt into the pasta. Garnish with chopped parsley if desired and serve warm.

Notes

Use freshly cooked chicken or rotisserie for convenience.

For a spicier kick, add a pinch of red pepper flakes.

If reheating leftovers, add a splash of milk to maintain creaminess.
