Description

Creamy Velveeta Chicken Rotini Pasta with Mozzarella Garlic Cheese Sauce is the ultimate comfort meal. This easy chicken pasta combines rotini, Velveeta, mozzarella, and garlic into a luscious cheese sauce perfect for dinner. Great for busy weeknights or family gatherings.


Ingredients

12 oz rotini pasta

1 lb boneless skinless chicken breasts, diced

8 oz Velveeta cheese, cubed

1 cup shredded mozzarella cheese

4 garlic cloves, minced

2 tbsp butter

1 ½ cups milk

2 tbsp all-purpose flour

½ tsp salt

½ tsp black pepper

1 tbsp olive oil

2 tbsp fresh parsley, chopped


Instructions

1. Bring a large pot of salted water to a boil. Add rotini pasta and cook until al dente. Drain and set aside.

2. In a skillet over medium heat, add olive oil. Sauté diced chicken with salt and pepper until fully cooked. Remove and set aside.

3. In the same skillet, melt butter and add minced garlic. Sauté until fragrant. Add flour and whisk for 1 minute to form a roux.

4. Slowly pour in milk, whisking constantly until the sauce thickens.

5. Add Velveeta and mozzarella cheese. Stir until melted and smooth. Season to taste.

6. Return chicken and rotini to the skillet. Stir until evenly coated in sauce.

7. Garnish with parsley and serve warm.

Notes

Let leftovers cool before storing.

Add a splash of milk when reheating to maintain creaminess.

Use rotisserie chicken as a time-saving option.
