Creamy Velveeta Chicken Rigatoni with Mozzarella Garlic Sauce is the ultimate comfort food, combining tender chicken, ridged rigatoni pasta, and a luscious cheese sauce made with Velveeta, mozzarella, and garlic. Perfect for a family dinner, this easy pasta recipe is rich, satisfying, and bursting with flavor.


Ingredients

1 pound rigatoni pasta

2 large chicken breasts

8 ounces Velveeta cheese, cubed

1 cup shredded mozzarella cheese

3 garlic cloves, minced

1 cup heavy cream

2 tablespoons butter

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Bring a large pot of salted water to a boil. Cook rigatoni until al dente, then drain and reserve 1 cup pasta water.

2. Season chicken with salt and pepper. Heat olive oil in a skillet over medium heat, cook chicken until golden and fully cooked, about 6-8 minutes per side. Let rest, then slice into strips.

3. In the same skillet, melt butter over medium heat. Add garlic and cook for 1 minute until fragrant.

4. Pour in heavy cream and bring to a gentle simmer.

5. Reduce heat and stir in Velveeta cubes until melted. Add mozzarella and mix until smooth. Adjust consistency with reserved pasta water if needed.

6. Add rigatoni and sliced chicken to sauce, toss well, and serve hot.

Notes

This recipe works with penne or ziti if you can’t find rigatoni.

For extra flavor, add a pinch of red pepper flakes to the sauce.

Leftovers can be stored in the fridge for up to 3 days and reheated gently.
