Ingredients
9 oz cheese ravioli
1 cup sun-dried tomatoes in oil, chopped
1 cup heavy cream
2 cloves garlic, minced
1/2 cup grated Parmesan cheese
1 tbsp olive oil (or reserved tomato oil)
1/2 tsp salt
1/4 tsp black pepper
Fresh basil for garnish (optional)
Instructions
1. Bring a large pot of salted water to a boil. Cook the cheese ravioli according to package instructions. Drain and set aside.
2. In a large skillet, heat olive oil or reserved tomato oil over medium heat. Add garlic and chopped sun-dried tomatoes. Sauté for 2-3 minutes until fragrant.
3. Reduce heat and pour in the heavy cream. Stir, then add Parmesan. Let the sauce thicken slightly, seasoning with salt and pepper.
4. Add cooked ravioli to the sauce. Toss gently until well coated and let simmer for 2 minutes.
5. Garnish with fresh basil and additional Parmesan. Serve warm.
