Ingredients
2 large chicken breasts
1 cup sun-dried tomatoes in oil
4 garlic cloves, minced
1 cup heavy cream
1/2 cup chicken broth
1/2 cup grated parmesan cheese
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil
Instructions
1. Season the chicken breasts with salt, pepper, and Italian seasoning.
2. Heat olive oil in a skillet over medium-high heat. Sear chicken for 5–6 minutes on each side until golden and cooked through. Remove and set aside.
3. In the same pan, sauté minced garlic for 30 seconds until fragrant. Add chopped sun-dried tomatoes and cook for 2–3 minutes.
4. Pour in chicken broth to deglaze the pan, scraping up brown bits.
5. Reduce heat, add heavy cream, and stir in parmesan cheese. Simmer until the sauce is smooth and slightly thickened.
6. Return chicken to the skillet, simmer for a few minutes more to absorb flavor.
7. Serve hot with your choice of pasta, rice, or bread.

Let the chicken rest a few minutes before slicing to retain juices.
Use the oil from the sun-dried tomato jar to boost flavor.
Don’t boil the sauce after adding cream to prevent curdling.
