Ingredients
12 jumbo pasta shells
1/2 pound raw shrimp, peeled and deveined
2 cups fresh spinach
1 cup mushrooms, sliced
3 cloves garlic, minced
4 ounces cream cheese
1 cup heavy cream
1/2 cup Parmesan cheese, grated
1/2 cup mozzarella cheese, shredded
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Boil the jumbo pasta shells in salted water until al dente. Drain and set aside to cool.
2. In a large skillet, heat olive oil and sauté garlic, mushrooms, and shrimp until shrimp are just cooked.
3. Add the spinach and cook until wilted. Let the mixture cool, then stir in cream cheese and half of the Parmesan.
4. In a saucepan, heat heavy cream over low heat. Add remaining Parmesan and some mozzarella, stirring until smooth. Season with salt and pepper.
5. Spoon the shrimp mixture into each pasta shell and place them in a baking dish.
6. Pour the cream sauce over the shells and sprinkle with remaining mozzarella.
7. Bake at 375°F for 20 minutes or until bubbly and golden.
Notes
This dish can be made ahead and refrigerated before baking.
Use wild-caught shrimp for better flavor and texture.
Add a pinch of red pepper flakes if you like a bit of heat.
