Ingredients
1 tablespoon olive oil
1 pound ground beef

1 can (10 oz) Rotel tomatoes
2 cups chicken broth
8 ounces pasta
4 ounces cream cheese
1 cup shredded cheddar cheese
Instructions
1. In a large skillet, heat olive oil over medium-high heat and add ground beef. Cook until browned, breaking it apart as it cooks. Drain excess fat.
2. Stir in garlic powder, onion powder, salt, and pepper. Mix well to season the beef evenly.
3. Add the Rotel tomatoes and chicken broth. Stir to combine and bring to a light simmer.
4. Add the pasta to the skillet. Reduce heat to medium-low, cover, and cook until the pasta is tender, stirring occasionally.
5. Stir in the cream cheese until fully melted and creamy.
6. Add the shredded cheddar cheese and stir until well combined and smooth.
7. Serve hot, optionally garnished with more cheese or chopped parsley.
