Ingredients

1 lb rotini pasta

2 boneless skinless chicken breasts

2 tablespoons Cajun seasoning

2 tablespoons butter

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons chopped parsley


Instructions

1. Boil salted water and cook rotini until al dente. Drain and set aside.

2. Season chicken breasts with Cajun seasoning, salt, and pepper.

3. Heat olive oil in a skillet, sear chicken on both sides until fully cooked. Remove and let rest.

4. In the same skillet, reduce heat and melt butter. Stir in garlic until fragrant.

5. Pour in heavy cream, then add Parmesan and stir until smooth. Adjust seasoning if needed.

6. Add rotini to sauce and toss to coat evenly.

7. Slice chicken and place on top of pasta.

8. Garnish with chopped parsley and serve hot.

Notes

This dish is best served fresh but stores well for up to 3 days.

Reheat with a splash of milk or cream to revive the sauce.

To turn up the heat, add red pepper flakes or extra Cajun spice.
