Ingredients
2 boneless skinless chicken breasts
1 cup cremini mushrooms, sliced
3 garlic cloves, minced
1 cup heavy cream
1 cup Parmesan cheese, freshly grated
2 tablespoons butter
2 tablespoons olive oil
4 medium gold potatoes, chopped
3 tablespoons hot honey
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon Italian seasoning
Instructions
1. Season chicken breasts with salt, pepper, and Italian seasoning. Sear in olive oil until golden and cooked through. Set aside.
2. Preheat oven to 425°F. Toss chopped potatoes with olive oil, salt, pepper, and hot honey. Roast for 25–30 minutes until crispy.
3. In the same skillet, add butter and sautée mushrooms until browned. Add garlic and cook until fragrant.
4. Pour in heavy cream and bring to a simmer. Stir in Parmesan and whisk until smooth and slightly thickened.
5. Slice the chicken and return to the pan to absorb the Alfredo sauce.
6. Serve with a generous portion of hot honey roasted potatoes on the side.
