This creamy mozzarella rotini with spicy Cajun beef and Velveeta sauce is a comforting weeknight dinner recipe loaded with cheesy goodness, bold Cajun flavor, and simple pantry ingredients. Perfect for busy nights, this pasta dish is fast, family-friendly, and satisfying.


Ingredients

1 lb rotini pasta

1 lb ground beef

2 tbsp Cajun seasoning

8 oz Velveeta cheese

1 cup shredded mozzarella cheese

3/4 cup heavy cream

1 tsp garlic powder

1 tsp onion powder

1/2 tsp salt

1/2 tsp black pepper

1 tbsp olive oil


Instructions

1. Boil the rotini pasta in salted water until al dente. Drain and set aside.

2. In a skillet over medium-high heat, heat olive oil and add the ground beef.

3. Season beef with Cajun seasoning, garlic powder, onion powder, salt, and pepper. Cook until browned.

4. In a separate saucepan, melt Velveeta cheese with heavy cream over low heat. Stir until smooth.

5. Add the Velveeta sauce to the skillet with the beef and mix well.

6. Stir in the cooked rotini and toss to coat evenly.

7. Sprinkle mozzarella cheese on top and stir until melted.

8. Taste and adjust seasoning if needed. Serve hot and enjoy!

Notes

Use rotini or substitute with penne or rigatoni for the best sauce cling.

You can increase Cajun seasoning if you prefer more heat.
