Description

Creamy Mozzarella Chicken Linguine in Garlic Cajun Butter is a spicy and savory pasta dinner that combines tender seared chicken, Cajun garlic butter sauce, mozzarella, and linguine. A perfect comfort food recipe with bold flavor and creamy texture.


Ingredients

450g linguine

2 large chicken breasts

2 tbsp Cajun seasoning

4 garlic cloves, minced

3 tbsp unsalted butter

1 cup heavy cream

1 ½ cups shredded low-moisture mozzarella

½ cup grated Parmesan cheese

Salt and pepper to taste

1 tbsp olive oil

2 tbsp chopped fresh parsley


Instructions

1. Slice chicken breasts in half horizontally to make thin cutlets. Season both sides with Cajun seasoning, salt, and pepper.

2. Heat olive oil in a large skillet over medium heat. Sear chicken on both sides until golden and fully cooked through. Set aside.

3. Cook linguine in salted boiling water until al dente. Reserve 1 cup of pasta water before draining.

4. In the same skillet, melt butter and sauté minced garlic until fragrant. Stir in extra Cajun seasoning.

5. Pour in the heavy cream and bring to a simmer until slightly thickened.

6. Add shredded mozzarella and Parmesan. Stir until melted and creamy. Add a bit of pasta water if needed to loosen the sauce.

7. Toss cooked linguine in the sauce until fully coated.

8. Slice chicken and lay over the pasta. Garnish with chopped parsley and serve immediately.

Notes

Let the chicken rest before slicing to retain juices.

Use low-moisture mozzarella to avoid watering down the sauce.

Add a splash of milk or cream when reheating leftovers to revive the sauce.
