Description

Creamy Marry Me Chicken Meatballs are juicy ground chicken meatballs simmered in a luscious sun-dried tomato cream sauce. This easy one-skillet dinner is perfect for busy nights or date night meals. Ingredients

1 pound ground chicken

1/2 cup breadcrumbs

1 large egg

1/4 cup grated parmesan cheese

2 cloves garlic, minced

1 teaspoon onion powder

1/2 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons olive oil

3/4 cup heavy cream

1/2 cup chicken broth

1/3 cup chopped sun-dried tomatoes

1/4 teaspoon red pepper flakes (optional)

2 tablespoons chopped fresh basil

Extra parmesan for topping (optional)


Instructions

1. In a large bowl, combine ground chicken, breadcrumbs, egg, parmesan, garlic, onion powder, salt, and pepper. Mix until just combined.

2. Shape the mixture into small meatballs using your hands or a scoop.

3. Heat olive oil in a large skillet over medium heat. Add meatballs in batches and sear until golden on all sides. Remove and set aside.

4. In the same skillet, sauté garlic and sun-dried tomatoes until fragrant, about 1 minute.

5. Pour in chicken broth and heavy cream. Stir to combine. Add red pepper flakes if using.

6. Return meatballs to the skillet and let simmer for 10 minutes, or until fully cooked and sauce thickens.

7. Stir in fresh basil and top with extra parmesan before serving.

Notes

Use ground turkey if preferred, but add moisture like egg or milk-soaked breadcrumbs.

Don’t overmix the meatball mixture—just enough to combine.

Taste your sauce before serving and adjust seasoning as needed.
