Ingredients

1 pound ground beef

1 pound Italian sausage

1 medium onion, chopped

3 cloves garlic, minced

2 tablespoons tomato paste

1 can (28 ounces) crushed tomatoes

4 cups chicken or beef broth

1 tablespoon Italian seasoning

1 teaspoon red pepper flakes (optional)

8 lasagna noodles, broken into bite-sized pieces

1 cup heavy cream or half and half

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 cup ricotta cheese

Fresh basil or parsley for garnish


Instructions

1. Brown the ground beef and sausage in a large pot over medium heat, breaking it up as it cooks. Drain excess fat.

2. Add chopped onions and cook until softened, about 5 minutes. Stir in minced garlic and cook 1 minute more.

3. Add tomato paste, crushed tomatoes, broth, Italian seasoning, and red pepper flakes. Stir well and bring to a simmer. Cook for 10 to 15 minutes.

4. Add the broken lasagna noodles and simmer until al dente, about 10 minutes. Stir occasionally.

5. Lower the heat and stir in the cream. Simmer another 2 to 3 minutes until heated through.

6. Mix in mozzarella and Parmesan until melted.

7. Serve hot with a dollop of ricotta on each bowl and garnish with fresh basil or parsley.

Notes

Let the soup rest a few minutes before serving to thicken slightly.

Store noodles separately to avoid them soaking up too much liquid.

Use hot or mild Italian sausage based on your spice preference.
