Ingredients

2 chicken breasts

1.5 pounds baby potatoes

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

3 garlic cloves, minced

1 cup baby bella mushrooms, sliced

1 tablespoon butter

1.5 cups heavy cream

3/4 cup Parmesan cheese, grated

1 teaspoon Italian seasoning

2 tablespoons basil pesto


Instructions

1. Preheat the oven to 400°F (200°C). Toss the baby potatoes with 1 tablespoon olive oil, salt, and pepper. Roast on a baking sheet for 25-30 minutes until golden and crisp.

2. Season chicken breasts with salt, pepper, and half the Italian seasoning. In a large skillet over medium heat, sear the chicken in 1 tablespoon olive oil until golden brown and cooked through. Remove and set aside.

3. In the same skillet, melt butter and add sliced mushrooms. Sauté until browned, then stir in the minced garlic and cook until fragrant, about 1 minute.

4. Pour in the heavy cream, stir, and bring to a gentle simmer. Add Parmesan cheese and the remaining Italian seasoning. Stir until melted and smooth.

5. Slice the chicken and return it to the skillet. Add roasted potatoes and gently toss to coat in the sauce.

6. Drizzle basil pesto over the finished dish before serving.

Notes

Cream will thicken more as it cools, so serve promptly.

You can use rotisserie chicken for a faster version.

Add spinach or sun-dried tomatoes for extra flavor and color.
