Ingredients
450g rigatoni pasta
2 boneless skinless chicken breasts
4 tablespoons butter
4 garlic cloves, minced
1 cup heavy cream
1 cup grated Parmesan cheese
1/2 cup chicken broth
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon Italian seasoning
1/2 teaspoon crushed red pepper flakes
2 tablespoons fresh chopped parsley
Instructions
1. Season chicken breasts with salt, pepper, and Italian seasoning.
2. In a large skillet, heat olive oil over medium heat. Sear chicken until golden and cooked through. Remove and slice.
3. Cook rigatoni in salted boiling water until al dente. Reserve 1/2 cup of pasta water and drain.
4. In the same skillet, melt butter and add garlic. Cook for 1 minute until fragrant. Add red pepper flakes.
5. Pour in chicken broth and heavy cream. Simmer until slightly thickened. Stir in Parmesan cheese until smooth.
6. Add sliced chicken and cooked rigatoni to the skillet. Toss well, adding reserved pasta water if needed.
7. Garnish with parsley and more Parmesan before serving.
Notes
Make sure not to overcook the pasta to keep it al dente.
Use freshly grated Parmesan for best flavor and texture.
Add spinach or mushrooms for an extra veggie boost.
