Ingredients
1 lb chicken breast
10 oz cheese tortellini
8 oz Velveeta cheese
1 cup heavy cream
3 garlic cloves, minced
2 tablespoons Cajun seasoning
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons chopped parsley
Instructions
1. Slice chicken breast into strips or cubes and season with Cajun seasoning, salt, and pepper.
2. Heat olive oil in a skillet over medium-high heat. Sear the chicken until fully cooked and golden. Set aside.
3. Cook tortellini according to package instructions. Drain and reserve a small cup of pasta water.
4. In the same skillet, sauté garlic in a bit of oil until fragrant.
5. Add heavy cream and heat until it starts to bubble.
6. Add Velveeta chunks and stir until completely melted into a smooth cheese sauce.
7. Return the chicken and cooked tortellini to the skillet and toss everything in the sauce.
8. If needed, thin the sauce with a splash of reserved pasta water.
9. Garnish with chopped parsley and extra Cajun seasoning.
10. Serve immediately, hot and creamy.
