Ingredients
2 chicken breasts
8 oz spaghetti
1 cup heavy cream
1 cup shredded mozzarella cheese
1/3 cup grated parmesan cheese
4 garlic cloves, minced
2 tablespoons butter
1 tablespoon olive oil
2 teaspoons Cajun seasoning
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1 tablespoon chopped fresh parsley
1/2 cup chicken broth
Instructions
1. Season chicken breasts with Cajun seasoning, salt, pepper, and paprika.
2. In a large skillet, heat olive oil and sear chicken until golden and fully cooked. Set aside.
3. Boil spaghetti in salted water until al dente. Reserve 1/4 cup pasta water, then drain.
4. In the same skillet, melt butter and sauté garlic until fragrant.
5. Add heavy cream and chicken broth, then bring to a gentle simmer.
6. Stir in mozzarella and parmesan, whisking until smooth and melted.
7. Slice cooked chicken and add back to the sauce.
8. Add drained pasta and toss everything together. Add pasta water if needed.
9. Garnish with parsley and serve immediately.
Notes
Use fresh garlic for the most flavor.
Don’t overcook the pasta – al dente texture is key.
A splash of cream or broth helps revive leftovers when reheating.
