Ingredients
1 pound rotini pasta
2 boneless skinless chicken breasts
1 tablespoon olive oil
1 tablespoon Cajun seasoning
1 teaspoon salt
1 teaspoon black pepper
3 garlic cloves, minced
2 tablespoons butter
1 ½ cups heavy cream
1 ½ cups shredded mozzarella cheese
½ cup grated parmesan cheese
2 tablespoons chopped fresh parsley (optional)
Instructions
1. Bring a large pot of salted water to a boil and cook rotini pasta until al dente. Drain and set aside.
2. Cut chicken into bite-sized pieces. Season with Cajun seasoning, salt, and pepper.
3. Heat olive oil in a skillet over medium-high heat and sear chicken until golden and fully cooked. Remove and set aside.
4. Reduce heat to medium, add butter, and sauté minced garlic until fragrant.
5. Pour in heavy cream and simmer gently for 3-4 minutes, stirring to deglaze the skillet.
6. Lower heat, add mozzarella and parmesan cheese, whisking until smooth and melted.
7. Add cooked rotini and chicken back into the skillet. Toss everything together until well coated.
