Ingredients

2 chicken breasts

8 oz rotini pasta

1 tbsp Cajun seasoning

3 cloves garlic, minced

2 tbsp butter

2 tbsp all-purpose flour

2 cups milk

1 ½ cups shredded mozzarella cheese

½ tsp salt

½ tsp black pepper

1 tbsp chopped fresh parsley


Instructions

1. Cut chicken into bite-sized pieces and season with Cajun seasoning, salt, and pepper. Sear in a hot skillet until cooked through, then set aside.

2. Cook rotini pasta in salted boiling water until al dente. Drain and reserve ½ cup of the pasta water.

3. In the same skillet, melt butter. Add garlic and cook until fragrant, then stir in flour to form a roux.

4. Gradually whisk in the milk. Let simmer until thickened, then stir in mozzarella cheese until melted.

5. Add the cooked chicken and rotini to the sauce. Stir gently to coat. Use reserved pasta water to loosen the sauce if needed.

6. Garnish with chopped parsley and serve hot.

Notes

Use freshly shredded mozzarella for the best melt.

Add crushed red pepper for extra heat if desired.

Substitute chicken with shrimp for a seafood twist.
