This Creamy Cajun Chicken Penne Pasta with Garlic Mozzarella Sauce is a comforting, flavor-packed dish featuring smoky Cajun-seasoned chicken, tender penne pasta, and a rich, garlicky mozzarella sauce. Perfect for weeknight dinners, it combines spice, creaminess, and cheesy goodness all in one pan.


Ingredients

12 oz penne pasta

2 boneless skinless chicken breasts

2 tbsp Cajun seasoning

2 tbsp olive oil

2 tbsp butter

4 garlic cloves, minced

2 tbsp all-purpose flour

2 cups whole milk

1 ½ cups shredded mozzarella cheese

¼ cup grated parmesan cheese

½ tsp salt

½ tsp black pepper

2 tbsp chopped fresh parsley


Instructions

1. Bring a large pot of salted water to a boil. Cook the penne pasta until al dente, then drain and set aside.

2. Slice chicken breasts evenly and season generously with Cajun seasoning.

3. In a large skillet, heat olive oil over medium-high heat. Cook the chicken until golden and fully cooked through, then remove and set aside.

4. In the same skillet, melt butter and add minced garlic. Sauté until fragrant.

5. Sprinkle flour over the garlic and stir continuously for 1 minute to form a roux.

6. Gradually whisk in the milk, cooking until the sauce begins to thicken.

7. Lower heat and stir in mozzarella and parmesan cheeses. Season with salt and pepper.

8. Return the cooked chicken to the skillet along with the penne pasta. Toss everything until well-coated.

9. Sprinkle fresh parsley over the top and serve immediately.

Notes

Use freshly grated cheese for the smoothest sauce.

Adjust Cajun spice to your heat preference.

Add a splash of milk when reheating to maintain creaminess.
