Ingredients

2 boneless skinless chicken breasts

2 tablespoons Cajun seasoning

12 ounces linguine pasta

1 cup heavy cream

3 garlic cloves, minced

4 ounces cream cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 tablespoons butter

1 tablespoon olive oil

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons chopped parsley (for garnish)


Instructions

1. Season both sides of chicken breasts with Cajun seasoning.

2. In a skillet, heat olive oil and 1 tablespoon of butter over medium-high heat. Sear chicken until golden and cooked through, 6–7 minutes per side. Set aside and slice.

3. Cook linguine in salted boiling water until al dente. Drain and set aside.

4. In the same skillet, reduce heat to medium. Melt remaining butter and sauté garlic for 1 minute.

5. Stir in heavy cream and cream cheese. Whisk until smooth.

6. Add mozzarella and Parmesan. Stir until melted and creamy. Add more Cajun seasoning if desired.

7. Toss linguine into the sauce, then add sliced chicken and combine everything.

8. Let simmer for 2 minutes to meld flavors.

9. Garnish with chopped parsley and serve hot.

Notes

This recipe is best enjoyed fresh when the sauce is at its creamiest.

Add a splash of cream when reheating leftovers to restore the sauce texture.

Adjust Cajun seasoning for more or less heat depending on your preference.
