Ingredients
2 chicken breasts
2 tablespoons Cajun seasoning
8 ounces linguine pasta
2 tablespoons olive oil
4 garlic cloves, minced
2 tablespoons butter
1 cup heavy cream
1 cup shredded mozzarella cheese
1/3 cup grated parmesan cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons fresh parsley, chopped
Instructions
1. Season both sides of the chicken breasts with Cajun seasoning.
2. Heat olive oil in a large skillet over medium-high heat and sear chicken for 6-8 minutes on each side until golden and cooked through. Remove and rest.
3. Cook linguine in salted boiling water until al dente. Reserve 1 cup of pasta water, then drain.
4. In the same skillet, melt butter and sautée minced garlic for 1 minute.
5. Pour in heavy cream and bring to a gentle simmer.
6. Stir in mozzarella and parmesan until melted and creamy. Add pasta water if sauce is too thick.
7. Toss cooked linguine in the garlic cheese sauce until well coated.
8. Slice the Cajun chicken and layer on top of the pasta.
9. Garnish with fresh parsley and extra parmesan. Serve hot.
Notes
Use homemade Cajun seasoning to control spice and salt levels.
Add a splash of pasta water to adjust sauce consistency.
Let chicken rest before slicing to retain juices.
