Ingredients
1 lb fettuccine pasta
2 large chicken breasts
2 tablespoons Cajun seasoning
1 tablespoon olive oil
2 tablespoons butter
4 cloves garlic, minced
1 ½ cups heavy cream
1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
½ teaspoon salt
¼ teaspoon black pepper
2 tablespoons fresh parsley, chopped
Instructions
1. Slice the chicken breasts into thin strips and coat them evenly with Cajun seasoning.
2. In a large skillet, heat olive oil and 1 tablespoon of butter over medium-high heat. Add the chicken and sear until golden and fully cooked. Remove and set aside.
3. Cook the fettuccine in salted boiling water according to package directions. Drain, reserving some pasta water.
4. In the same skillet, add the remaining butter and minced garlic. Cook until fragrant.
5. Pour in the heavy cream and simmer gently. Stir in mozzarella and Parmesan until the sauce is smooth. Season with salt and pepper.
6. Toss in the cooked pasta, adding a splash of reserved pasta water if needed to loosen the sauce.
7. Return the chicken to the skillet and mix everything well.
8. Garnish with fresh parsley and serve hot.
Notes
Use freshly shredded mozzarella for a smoother melt.
