Ingredients
2 boneless skinless chicken breasts
8 oz bowtie pasta
1 tablespoon Cajun seasoning
3 cloves garlic, minced
1 cup heavy cream
1 cup shredded sharp cheddar cheese
1/2 cup grated Parmesan cheese
2 tablespoons butter
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Bring a large pot of salted water to a boil and cook bowtie pasta until al dente. Drain and reserve 1/2 cup of pasta water.
2. Season chicken breasts with Cajun seasoning, salt, and pepper. In a skillet over medium-high heat, heat olive oil and cook chicken until golden brown and fully cooked. Remove and set aside.
3. In the same skillet, reduce heat to medium. Melt butter, add garlic, and sauté until fragrant.
4. Add heavy cream and stir in both cheeses gradually, whisking until sauce is smooth and creamy.
5. Add cooked pasta and chicken into the sauce. Toss well to coat. Use reserved pasta water to thin sauce if needed.
6. Taste and adjust seasoning. Serve hot, garnished with extra Parmesan or parsley if desired.
